Disclaimer: This post is based solely around food, so if you’re craving an update post, check back soon :) I’m obviously not a food blogger, but just bear with me. Food - love to eat it, love to cook it. But, part of my love for food comes from the planning and budgeting that goes along with it. I know many women absolutely loathe that process, but planning and organization rock my world. Since we’re down to one income for the time being, budgeting has become all the more important. And since I don’t usually get home from work until 6ish, I’m always looking for recipes that allow for leftovers. Let’s be honest, as much as I enjoy cooking, I absolutely do not want to do it every single night when I get home. After some Pinterest perusing, I’ve found a few super tasty recipes that are easy to put together, budget friendly, and allow for leftovers. Since we’ve all probably experienced some major Pinterest fails (I know I have!), I thought it was worth sharing some Pinterest wins!

Quite frankly, I’m embarrassed about how easy and delicious this Taco Bake is. 4 ingredients, 30 minutes, and endless possibilities. You can use this delish concoction for taco salad, tacos, enchiladas, or whatever else you can dream up! If you’re a fan of sour cream and/or guacamole, then they are a must for however you decide to use this bake. Fiesta in the mouth, y’all! 
Next up is one of Bryan’s very favorite meals ever. If the vivid colors in this dish don’t make you happy, then the taste surely will! Think chicken and rice, but with a punch. This Baked Chicken and Rice with Black Beans dish is pretty to look at has lots of goodies packed into it, so it's basically a one dish meal. I'm sold! 
And lastly, the Best Ever Banana Bread recipe. If you’re steering clear of sweets, look away now! I make this occasionally when we have overripe bananas, which are perfect for banana bread recipes. A batch of this bread will literally just take you 5 minutes to whip up. Crazy right? I do veer from the recipe slightly by adding a few shakes of cinnamon, but that’s just my personal preference. I also don’t add nuts because Bryan isn’t much of a fan and it still tastes great! Oh, and be sure you watch the bread as it approaches being done. The moistness of bread is really what makes the recipe great, so you don’t want to dry it out. Been there, done that.
